Our extra virgin olive oil is a blend of three Tuscan olive varietals- Frantoio, Leccino, and Pendolino- grown in two groves on our farm in Paso Robles, California. Each year, we hand-harvest the best olives our trees have to offer. We then bring them to a mill to be pressed locally within hours of harvest to ensure freshness and quality. Milling is done using the cold press method, preserving nutrients and preventing degradation. The oil is then stored in our barrels, allowing sediment to settle at the bottom. During this time we employ a method known as racking, where we transfer settled oil to clean containers to further separate it from sediment. Finally, after a few months of storage, our oil is hand bottled into our 375 mL dark glass bottles.
